These Zesty Lemon Coconut Bliss Balls are the perfect bite-sized treat for when you’re craving something sweet yet wholesome. They’re light, tangy, and naturally sweetened with dates — no refined sugar, no baking, and ready in minutes!

Each bite bursts with fresh lemon flavor, soft coconut texture, and a hint of nuttiness from the almond flour. Roll them in crushed almonds for a crunchy finish or poppy seeds for a little extra zing.
Ingredients
1 cup almond flour or coconut flour, or a combination of both
Juice of 2 lemons, zest of one
5 Medjool dates, pitted
Optional coatings:
2 tbsp crushed almonds
1 tbsp poppy seeds
Instructions
Blend: Add the coconut flour, almond flour, lemon juice and zest, and dates to a food processor. Blend until the mixture comes together into a soft, slightly sticky dough.
Shape: Roll the mixture into small balls, about 1 tablespoon each.
Coat: Roll half the balls in crushed almonds for crunch, and the rest in poppy seeds for a smooth, speckled look.
Chill (optional): For a firmer texture, refrigerate for 20–30 minutes before serving.
Storage
Store in an airtight container in the fridge for up to 1 week — or freeze for up to a month for a quick grab-and-go snack.
Tip
If your mixture feels too dry, add a teaspoon of warm water or a little extra lemon juice until it binds easily.
If you want them sweeter, add a little honey or maple syrup.
