🧁 The Recipe: High-Protein Health Muffins


Ingredients

  • 2 scoops unsweetened, unflavoured protein powder

  • ½ cup almond flour

  • 1 tsp baking powder

  • 1 cup mashed banana or apple purée

  • ½ cup peanut butter (if you want to cut the fat, swap out the peanut butter with 52g PB2 powder and mix with enough water to a peanut butter consistency and to equal about a half cup).

  • 1/4 cup dark chocolate bits


Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tray.

  2. In a mixing bowl, combine the protein powder, almond flour, and baking powder.

  3. Add your mashed fruit of choice and stir until smooth.

  4. Fold in your peanut butter and chocolate bits

  5. Scoop the batter into muffin cups.

  6. Bake for 15–20 minutes, or until golden and set in the centre.

  7. Try not to eat them all while they’re still warm. (Or do. I won’t judge.)
